Lemon Bread (Easy)

What can you make with lots of lemons? Make Lemon bread and in this video we’ll show you how to make an easy lemon bread loaf with fresh lemon juice and grated lemon rinds in the batter covered in a light homemade lemon glaze drizzle over the baked bread. Good old-fashioned lemon loaf bread that's sweet, tangy and a quick to make at home.

Lemon Bread Batter
Ingredients
2 cups all-purpose flour
2 tsp. baking powder
¼ tsp. salt
½ cup butter, softened
1 cup cane sugar
2 Tablespoons fresh lemon juice, divided
2 Tablespoons grated lemon rinds
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk

Directions: In a large bowl, cream butter and sugar, add eggs with milk, flour, baking power and salt. Blend. Then, add lemon juice, grated lemon rind and vanilla until blended. Spread batter in parchment paper linedared loaf pan.
Bake until a wooden pick inserted in the center comes out clean, about 45 minutes; meanwhile, prepare lemon glaze.

Drizzle glaze over warm bread; let cool in pan, then remove from pan and let cool on rack. Enjoy!

Lemon Glaze
Ingredients
3 Tablespoons fresh lemon juice
1/4 teaspoon lemon extract
6 tablespoon confectioner's sugar

Direction: In a small bowl, combine lemon juice and sugar; stir until sugar is dissolved.
