Ham and cheese empanadas are simple to make and incredibly delicious. The pastry is fail proof and made with a delicious combination of flour, sugar, butter, vinegar (this makes it easier to work with), cold water, egg, and a pinch of salt. The outcome is similar to a delightful puff pastry.

The empanadas are stuffed with hame and cheese. In this recipe we add an extra filling - pineapple. This adds an element of sweetness and makes the recipe so delicious. You can, however, use the pastry recipe and add just about any filling imaginable.

I first tried empanadas in the Philippines. They are a common street food which, much to my surprise, are incredibly delicious. After tasting one, if you know me, I had to rush home and reproduce. Once again, I went to work. I have to admit that the trickiest part was making the filling. The recipeI came up with, as mentioned above, was very similar in texture to puff pasty - buttery, fluffy, and flaky. In other words, fantastic. would of thought that a pastry filled with ham, cheese, and pineapple could be so good. Nevertheless, it was.

Combine this pasty with the delicious filling and the outcome is out of this world.
