Comfort foods - the Americans have Mac n Cheese, Indians have Khichdi and the Egyptians, well they have the Koshari. This dish is a fusion of Italian, Indian and Middle Eastern cuisines and it's practically the national dish of Egypt. I didn't discover it when I travelled to Egypt as a tourist. But I shouldn't be surprised - not many international tourists coming to India get to eat Khichdi too. It was relatively recently that I first had Koshari; it was at a restaurant in Dubai, and this flavourful combination of rice, lentils, macaroni and chickpeas has quickly become a favourite at my home.
Serves 3-4 pax
Ingredients:
for the green lentils/ akha masoor
1/4 +1/8 cup green lentils; soaked and cooked al Dante
1 tsp oil
1/4 cup onions; finely chopped
1/4 cup tomato puree
1/2 tsp cumin powder
salt to taste
for the vermicelli
1 tsp oil
1/4 cup vermicelli
water to cover and cook
salt to taste
garlic cumin sauce
1 tsp oil
1 tsp garlic; minced
1 tbsp cumin powder
3 tbsp water
3 tbsp vinegar
salt to taste
for the tomato sauce
1 1/2 oil
2 cloves garlic; minced
1 1/2 cup tomato puree
1/2 tsp chilli falkes
1 1/2 tbsp vinegar
salt to taste
for the butter garlic sauce
2-3 tbsp butter; melted
2-3 cloves garlic; minced

1/2 cup rice; soaked n cooked
1/4 cup chick peas; soaked n boiled
1/4 cup macaroni; boiled
fried onions
lime juice
