I've tried traditional cauliflower "potato" salad in the past and wasn't a huge fan. Something about the taste combined with the texture just didn't feel right and I didn't enjoy it. I love loading my cauliflower and broccoli up like a baked potato, so decided to try my hand at making a baked potato salad with cauliflower instead in hopes that I might like it more. You guys, this is SO good! It still has the cauliflower texture we all know and love, but the flavor is spot on! It's an excellent side dish with any protein you choose, but I'm especially excited to have it when it warms up a bit and we light up the grill! Ingredients: 1 medium head of cauliflower, diced into bite sized pieces 1/2c mayo 1/2c sour cream 1tbsp bacon grease (optional, but I'd do it if I were you) 1tsp garlic powder 4 slices bacon, diced 4 slices cheddar, diced (sandwich slices - I used Sargento because it was 0 carbs as opposed to 1g for the store brand) 3 green onions, diced salt and pepper to taste Preheat oven to 400F Spray a baking sheet with nonstick spray and spread cauliflower pieces out evenly. Spray with a little more oil then add salt and pepper to taste. Bake for 20 minutes. Remove to a bowl and refrigerate for an hour. Combine mayo, sour cream, bacon grease, and garlic powder. Mix well. Add sauce mixture to cooled cauliflower and mix. Add bacon, cheese, green onion, salt, and pepper and mix well. Refrigerate at least 1 hour before serving to let the flavors mingle. Makes 4 large servings at 5g net carbs and 423 calories per serving. This could easily be divided into 6 servings to lower the carbs and calories if you have more willpower than I do and are cool with a smaller serving. Change up the seasonings based on what you like - add a little paprika for color or some cajun seasoning to spice things up!
