Nelusko is a classic Filipino cake that dates back to the early 1970s. No one really knows the origin of this popular dessert, but one thing is for sure…it is incredibly delicious! The basic components of this cake consist of layers of delicate chocolate chiffon cake, dark chocolate buttercream, and crunchy cashew nut praline. These elements may seem simple and straightforward, but their merging unleashes a cornucopia of flavors and textures that will leave you in a state of gastronomic trance!
Chef Joey grew up loving this cake, having been made by his mother, chef-extraordinaire Myrna Prats, during the former’s elementary and high school days. But, as luck would have it, the recipe got lost during the great earthquake of 1990, and the cake never saw the light of day ever again. And so, Chef Joey took it upon himself to recreate the original recipe of his mom, and add a few tweaks of his own to elevate this timeless cake to new heights!
In recreating the recipe, Chef Joey started with his light-as-a-feather chocolate chiffon cake, moistened the layers judiciously with simple syrup for added moistness, and then juxtaposed them with a mixture of dark chocolate buttercream and cashew nut praline. Then, the showstopper creation is majestically adorned with more golden praline and a crown of dark chocolate petals. Truly, a masterpiece of Royal proportions!
The sweetness level of the original formula was tempered down to produce a less-sweet version of the cake that better suits the taste profile of today’s dessert lover. As an added bonus in this class, Chef Joey shares techniques for tempering chocolate using the seeding method…a process students will find useful and invaluable in their development as professional bakers.
